One thing to remember is that quickening the rise time typically results in a more mellow flavor while lengthening the rise time adds more depth of flavor. One is great for when you're in a hurry, but the other is great for when you want a deep complex flavor for your breads. However you like it you can learn how to tailor it to you r tastebuds!
